Tonight’s photos are curtesy of my husband. He humored me and grilled the backstrap that I cut into medallions and coated with a Cowboy-Style Coffee Rub.

Cowboy-Style Coffee Rub
- 1 TBSP freshly ground coffee
- 1.5 tsp salt
- 1/2 tsp brown sugar
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
Put all the seasonings into a small bowl. Cover with the lid and shake until combined. Rub into your venison or beef and allow to set at room temperature for 15 minutes before grilling.

We completed our cowboy dinner with Hannah’s 7-Layer Dip and a fresh salad. This is one of my favorite ways to enjoy summer.
