Margherita Flatbread Pizza

Yesterday my niece celebrated her Sweet 16. Rob, Aly and Hannah went to the party. I stayed home with Grandma, who can’t handle the noise, and was therefore able to pick up Kenzie from her new job at the grocery store. 

I got to the store early and did some shopping while I waited for my girl to finish her shift. Over by the deli, I found this package of flatbread. The image of the sandwich on the cover looked yummy, but I wanted to use it to make some Margherita Flatbread Pizza. 

All you need to make this pizza is fresh mozzarella, (Don’t cheat and use the shredded mozzarella from a bag. The flavor will not have the smae pop.) thinnly sliced tomatoes, garlic, olive oil and fresh chopped basil. Plus the flatbreads to make the crust, obviously.

I mixed the garlic and olive oil in a small sauce cup. Then I brushed it onto the flatbreads. They went into a 350-degree F oven just like that for 5 minutes. 

After the flatbreads came out of the oven, I topped them with 4 slices of the fresh mozzarella and 5-6 slices of tomato. I also added a little bit of salt and pepper. Then I put them back in the oven for another 5 minutes, before putting them under the broiler on HIGH for 3 minutes. 

Finally I topped the flatbreads with fresh, chopped basil. 

I was afraid that Kenzie and my mother in law would be opposed to a vegetarian pizza, but they enjoyed these. (Kenz is actually already planning to make another one for lunch today.) I bet you will too.
